Apricot Kiffle Cookies

Ingredients
- 1 cup butter
- 8 oz cream cheese
- 2 ¼ cups all-purpose flour
- ¼ teaspoon salt
- 1 jar apricot preserves
- Powdered sugar, for dusting

Prepare the Dough: In a mixing bowl, beat together the butter and cream cheese until smooth and well combined.

Add Dry Ingredients: In a separate bowl, whisk together the flour and salt. Gradually add this to the butter and cream cheese mixture, mixing until fully incorporated.

Chill the Dough: Divide the dough into four equal parts and wrap each in plastic wrap. Flatten each portion into a disk, then refrigerate for at least 2 hours until firm.

Preheat Oven: When ready to bake, preheat the oven to 375°F and line a baking sheet with parchment paper.

Roll Out Dough: Take one disk of dough from the refrigerator and place it on a lightly floured surface. Roll out the dough to about 1/8 inch thick. Use a pastry cutter to cut out 2-inch squares from the dough.

Fill and Fold: Place a small amount of apricot preserves in the center of each square. Bring two opposite corners of each square together over the apricot filling and pinch them together to seal.

Bake: Arrange the kiffles on the prepared baking sheet and bake for 12 to 14 minutes, or until the bottoms are golden brown. Repeat the process with the remaining dough.

Cool and Dust: Allow the kiffles to cool on the pan for a few minutes before transferring them to a wire rack to cool completely. Once cooled, dust generously with powdered sugar before serving.
